Hot Water Pastry

  • 575g Plain Flour
  • 200g Beef Dripping or Lard
  • 200g Water
  • A good pinch of Sea Salt

1. In a saucepan, melt the fat in the water and bring it to the boil.

2. Sift the flour into a large mixing bowl, add the salt and mix well. Slowly and carefully pour in the hot fat and mix with a wooden spoon, being sure to make sure it is all fully incorporated.

3. When cool enough to handle but still warm, knead the pastry for a few seconds on a lightly floured surface to ensure there are no lumps of flour stuck in the mix.

4. Place back in the bowl and cover with a tea towel and leave in a warm place (this will stop it drying out and gardening too quickly.
